Spicy Pineapple Wings

Wings are meant to be messy fingers, napkins, a little bit of chaos around the table. Ours got a lot messier (in the best way) the day we tossed a batch straight from the fryer in our Spicy Pineapple Sauce instead of the usual BBQ. One bite in, and it was clear this was the only way we'd be pairing wings from now on.


What Makes This Combo Work

Fried chicken skin is rich and savoury with just enough crunch to hold up to a good coating, which makes it the perfect match for our sauce. As soon as the pineapple hits, you get that fruity sweetness first, then the habanero rolls in right behind it, building heat with every wing instead of hitting you all at once. The meat stays juicy, and the sauce ties the whole thing together instead of just sitting on top.

Ingredients

  • 1kg chicken wings,

  • halved at joints,

  • wingtips discarded

  • 2 tablespoons baking powder,

  • 3/4 teaspoon salt

  • 1/2 teaspoon cracked black pepper

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1/3 cup frank's wings hot sauce

  • 1 cup light brown sugar

  • 1 tablespoon water

Directions

  1. Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.

  2. Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.

  3. Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!

  4. Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.

  5. Arrange wings, skin side up, in single layer on prepared wire rack.

  6. Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.

  7. Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.
